Award-winning banana cookie recipe.
Ingredients:
  • 2 eggs
  • 0.5 cup shortening
  • 1 cup packed brown sugar
  • 1 cup mashed bananas
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cloves
  • 0.5 cup chopped pecans
  • 3 cups sifted confectioners' sugar
  • 1 tablespoon butter, melted
  • 0.75 teaspoon vanilla extract
  • 3 tablespoons milk
Instructions:
  • Preheat your oven to 350°F (180°C).
  • Cream the shortening until smooth, then mix in the brown sugar, beating until well combined. Stir in the eggs and banana, beating until thoroughly mixed.
  • Combine the flour, baking powder, baking soda, salt, and spices, then add the mixture to the creamed ingredients. Mix thoroughly before gently folding in the pecans.
  • Spoon rounded tablespoonfuls of dough onto greased cookie sheets, leaving 2 inches of space between each. Bake for 12 minutes, then transfer to wire racks to cool. Finish by dipping half of the cooled cookies into Powdered Sugar Icing for a sweet touch.
  • For the icing, mix together 3 cups of confectioner's sugar, 1 tablespoon of melted butter or margarine, and 3/4 teaspoon of vanilla extract. Adjust the thickness by adding milk gradually until you reach your desired consistency, making sure to mix until smooth.
