Banana Cream Cake Batter Cookies

Irresistible banana cream cheese frosting sandwiched between yellow cake and sugar cookie mix cookies - a delectable treat!
Ingredients:
  • 1 cup from 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup butter, softened
  • 1 egg
  • 4 oz (half of 8-oz package) cream cheese, softened
  • 6 tablespoons butter, softened
  • 1/2 teaspoon vanilla
  • 2 tablespoons banana instant pudding and pie filling mix
  • 1 1/3 cups powdered sugar
  • 1/3 cup miniature semisweet chocolate chips
Instructions:
  • Preheat the oven to 375°F. Place 1/2 cup of the dry cake mix in a small bowl and set aside.
  • Combine the cookie mix, the remaining 1/2 cup of cake mix, 1/2 cup of butter, and the egg in a medium bowl until a soft dough forms. Shape the dough into 20 (1 1/2-inch) balls and coat them evenly with the reserved cake mix. Place the balls 2 inches apart on an ungreased cookie sheet.
  • Bake 8 to 10 minutes until just set, being careful not to overbake. Let cool for 1 minute, then transfer to a cooling rack. Cool completely for about 15 minutes before serving.
  • In a medium bowl, use an electric mixer to blend cream cheese, 6 tablespoons of butter, vanilla, and dry pudding mix until smooth. Gradually mix in powdered sugar until frosting is light and fluffy.
  • Spread a generous 1 1/2 teaspoons of frosting on the bottom of one cookie. Place another cookie on top, bottom side down, and press together gently. Roll the edges of the cookies in chocolate chips.
