Whip up a delicious banana cake using ripe bananas and basic ingredients.
Ingredients:
  • Melted butter, to grease
  • 125g butter, at room temperature, chopped
  • 100g (1/2 cup) caster sugar
  • 8.80 gm vanilla essence
  • 2 eggs
  • 350g mashed banana
  • 265g (1 3/4 cups) self-raising flour, sifted
  • 2.50 gm bicarbonate of soda
  • 80ml (1/3 cup) milk
  • Double cream, to serve
  • 50g butter
  • 125ml (1/2 cup) maple syrup
  • 42.00 gm fresh orange juice
Instructions:
  • Preheat your oven to 180°C and coat a deep 22cm fluted ring pan with luxurious melted butter.
  • In a medium bowl, blend butter, sugar, and vanilla with an electric beater until pale and creamy, about 5 minutes.
  • Beat in the eggs one at a time, ensuring each is thoroughly mixed in. Transfer the mixture to a large bowl and gently incorporate the banana. Using a large metal spoon, fold in half of the flour and bicarbonate of soda, followed by half of the milk. Repeat with the remaining flour, bicarbonate of soda, and milk until the batter is just smooth.
  • Pour the batter into the pan, making sure to create a perfectly smooth surface. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean. Allow it to cool in the pan for 10 minutes before transferring it onto a wire rack set over a baking tray to cool completely.
  • Prepare the orange maple sauce by combining butter, maple syrup, and orange juice in a small saucepan over medium heat until the butter melts. Bring to a boil over high heat, then reduce to medium-low and simmer for 3 minutes, stirring occasionally. Let it cool for 5 minutes before serving.
  • Drizzle the sauce generously on top of the cake and accompany it with a dollop of cream.
