Banana cake with marshmallow topping, a delicious and simple treat!
Ingredients:
  • 24 large marshmallows
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 cup margarine, softened
  • 1.5 cups white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup buttermilk
  • 1 cup chopped nuts
  • 1 cup mashed very ripe banana
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 pan, then evenly layer the marshmallows at the bottom of the pan.
  • Combine the flour, salt, baking soda, and baking powder by sifting them together, then set aside.
  • Combine margarine and sugar in a large bowl until light and fluffy. Add eggs one at a time, then mix in the vanilla. Gently fold in the flour mixture and buttermilk in alternating batches until just combined. Lastly, fold in nuts and bananas.
  • Ensure the marshmallows are completely covered as you pour the batter over them, making sure it reaches all corners of the pan.
  • Place in the center rack of the oven and bake for 45 minutes until the marshmallows rise to the top, creating a delicious topping. Don't worry if the cake looks slightly underbaked due to the marshmallows. Let the cake cool before serving.
