Indulge in this delightful strawberry picnic cake, perfect for a sunny day paired with a cup of tea.
Ingredients:
  • 200g White Chocolate Melts
  • 125g Block Cream Cheese, softened
  • 125g butter, softened
  • 215.00 gm caster sugar
  • 257.50 gm milk
  • 8.80 gm vanilla extract
  • 2 eggs, lightly beaten
  • 250.00 ml flour
  • 150.00 gm self-raising flour
  • 500g strawberries, halved
Instructions:
  • In a saucepan, melt the chocolate, PHILLY, butter, sugar, milk, and vanilla over medium heat. Once melted, transfer the mixture to a bowl and allow it to cool.
  • Combine the eggs with the sifted flours, whisk until smooth. Spread half of the batter in a greased and paper-lined 31cm x 21cm slab pan. Place half of the strawberries on top. Pour the rest of the batter over the strawberries and decorate with the remaining berries.
  • Bake at 160°C in a slow oven for 1 hour, or until cooked when tested. Let it stand for 10 minutes before transferring to a wire rack to cool. Serve sliced with a dollop of cream.
