Indulge in a spectacular strawberry ricotta layer cake for a truly irresistible dessert!
Ingredients:
  • 450g butter, softened
  • 660g caster sugar
  • 20.00 ml finely grated orange rind
  • 6 free range eggs
  • 360g ricotta
  • 675g plain flour
  • 10.00 gm baking powder
  • 2.50 gm bicarbonate of soda
  • 310ml buttermilk
  • 60ml orange juice
  • 6 strawberries, end trimmed, very thinly sliced
  • 250g strawberries, extra, to decorate
  • 20.00 ml redcurrant jelly, melted or strawberry jam, melted, strained
  • 150g strawberries, finely chopped
  • 40.00 gm caster sugar
  • 250g butter, softened
  • 500g icing sugar mixture
Instructions:
  • Preheat your oven to 180C and prepare three 20cm cake pans by greasing and lining the base and sides.
  • Using an electric mixer, cream together butter, sugar, and orange rind until pale and creamy in a bowl. Add eggs one at a time, mixing well after each addition. Blend in the ricotta. Fold in the flour, baking powder, and bicarbonate of soda until combined. Mix in buttermilk and orange juice. Pour the batter into prepared pans and bake for 45 minutes, or until a skewer inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Level the cakes by trimming the tops with a large serrated knife.
  • In a small saucepan, mix the strawberries and sugar together. Let it sit for 5 minutes to release the juices. Cook over medium-low heat for 10 minutes until the sugar dissolves, strawberries break down, and the mixture thickens. Allow it to cool, then process in a food processor until nearly smooth.
  • Utilize an electric mixer to whip the butter in a bowl until light in color. Slowly incorporate the icing sugar, beating thoroughly after each addition. Mix in the strawberry blend.
  • Place the cake on a serving plate, generously top with one-third of the luscious buttercream, ensuring it's spread evenly over the top and sides. Layer with a generous amount of fresh sliced strawberries, then repeat with the remaining cakes, buttercream, and strawberries for a delightful and beautiful presentation.
  • Cover the entire top and sides with the remaining luscious buttercream. Coat the whole strawberries with the shiny redcurrant jelly and artfully place them on the cake.
