15 Minute Refreshing Strawberry Ricotta Bruschetta: Toasted bread topped with strawberries, creamy ricotta cheese, and fragrant basil for a delightful appetizer twist.
Ingredients:
  • 24 slices (1/2 inch thick) baguette (about 8 oz)
  • 1 lb fresh strawberries, chopped
  • 1 teaspoon sugar
  • 1 container (15 oz) ricotta cheese
  • Balsamic vinegar
  • 4 to 6 fresh basil leaves, coarsely chopped
  • Cracked black pepper to taste
Instructions:
  • Preheat oven to 375°F. Arrange baguette slices on a large ungreased cookie sheet and bake for about 5 minutes, or until lightly toasted.
  • In a medium bowl, combine the strawberries with the sugar.
  • Spread creamy ricotta cheese on each golden toasted baguette slice, layer with vibrant strawberries, and then drizzle with tangy balsamic vinegar. Finish with a sprinkle of fresh basil and a hint of cracked black pepper for a burst of flavor.
