Fruity strawberry cupcakes with rich cream cheese icing.
Ingredients:
  • 1 quantity classic cupcake recipe
  • 250g punnet strawberries, hulled, chopped
  • 250g tub reduced-fat cream cheese
  • 24.00 gm pure icing sugar
  • 52.80 gm strawberry jam
Instructions:
  • Prepare muffin tin by lightly greasing or lining 16 muffin holes with paper cases as per classic cupcake recipe.
  • Reduce the milk to 1/2 cup, then gently fold in the strawberries.
  • Proceed with baking the cupcakes as directed in step 3.
  • Prepare icing: Utilizing an electric mixer, blend cream cheese and icing sugar until velvety. Coat cupcakes with the smooth mixture. Garnish each cupcake with 1 teaspoon of jam, then use a teaspoon to create a delightful swirl of jam and icing. Present and enjoy!
