Make festive 4th of July cupcakes with strawberries, food coloring, cream cheese frosting, and blueberries.
Ingredients:
  • 2 cups white sugar
  • 1.75 cups pureed strawberries
  • 0.75 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups self-rising flour
  • 3 drops red food coloring, or as needed
Instructions:
  • Preheat the oven to 325°F (165°C) and prepare a 24-cup muffin tin by greasing or lining with paper liners.
  • In a bowl, blend sugar, pureed strawberries, oil, eggs, and vanilla extract using an electric mixer until the mixture is smooth. Gradually add flour and mix until combined. Gently fold in food coloring until the batter is evenly colored. Distribute the batter evenly among the muffin cups.
  • Bake in the preheated oven for 15 to 20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
