Festive strawberry cupcakes - a delightful holiday treat to share with loved ones.
Ingredients:
  • 185g butter, softened
  • 1 tsp strawberry essence
  • 215g caster sugar
  • 3 eggs
  • 190g plain flour
  • 75g self-raising flour
  • 80ml milk
  • 3 x 30g packets sultana bursts strawberry flavour
  • 150g icing sugar
  • 20.60 gm milk Christmas sprinkles, to decorate
Instructions:
  • Preheat the oven to 180°C (160°C fan-forced) and line twelve 3/4 cup (185ml) Texas muffin pans with paper cases.
  • In a large bowl, with an electric mixer, whip the butter, essence, and sugar until pale and creamy. Gradually add the eggs one at a time, ensuring each is well incorporated before adding the next. Gently mix in the combined flours, milk, and sultanas in two batches until fully combined.
  • Distribute mixture evenly into the paper cases. Bake in a preheated oven for 25-30 minutes, or until a skewer comes out clean when inserted into the center of the cakes. Let cool completely on a wire rack.
  • For the icing, sift the icing sugar into a medium bowl. Mix in just enough milk to create a silky icing. Drizzle the icing over each cake and top with Christmas sprinkles.
