Strawberry and mascarpone lattice wafers

Elevate Christmas with fancy strawberry mascarpone wafer treats.
Ingredients:
  • 2 x 250g punnets strawberries, hulled, halved
  • 55g caster sugar
  • 4.40 gm vanilla extract
  • 250g mascarpone cheese
  • 60ml thickened cream
  • 12.00 gm icing sugar, sifted
  • 12 Arnott’s Lattice biscuits
Instructions:
  • In a saucepan over medium-high heat, combine strawberries, caster sugar, and vanilla. Stir and cook for 1-2 minutes until the sugar melts and strawberries slightly soften (be careful not to overcook). Remove from heat.
  • Combine mascarpone, cream, and icing sugar in a bowl. Layer serving plates with half of the biscuits, a generous spoonful of the mascarpone mixture, fresh strawberries, and a drizzle of strawberry juice. Add the remaining biscuits on top. Serve and enjoy!
