Ingredients:
  • 500g strawberries, hulled, halved
  • 37.50 gm icing sugar mixture
  • 125g mascarpone cheese, at room temperature
  • 200g Greek Style Yoghurt
  • 6 butternut snap cookies
Instructions:
  • In a bowl, combine strawberries with 1 tablespoon of icing sugar. Allow it to sit for 5 minutes.
  • While you wait, mix mascarpone, yogurt, and the rest of the icing sugar in a bowl. Place the biscuits in a plastic bag, seal it, then crush the biscuits with a rolling pin. Add the crushed biscuits to the mascarpone mixture and gently stir until just combined.
  • In four 400ml-capacity glasses, layer one-third of the strawberries followed by half of the mascarpone mixture. Repeat with remaining strawberries and mascarpone mixture. Serve.
