Elevate brunch with grilled strawberry skewers and zesty orange mascarpone.
Ingredients:
  • 375g mascarpone
  • 2.50 gm ground cinnamon
  • 20.00 ml finely grated orange rind, plus orange zest to serve
  • 3 x 250g punnets strawberries, hulled
  • 12 slices sourdough bread
  • 36.40 gm extra virgin olive oil
  • 125.00 ml pepitas and sunflower kernels seed mix
  • 111.38 gm maple syrup, plus extra to serve
Instructions:
  • Mix together the mascarpone, cinnamon, and orange rind in a bowl.
  • Skewer 12 strawberries. Brush oil on both sides of sourdough bread.
  • Preheat a barbecue grill or chargrill pan over medium-high heat. Grill skewers and sourdough in two batches for 3 minutes per side, or until they achieve a delicious char.
  • Toast seed mix in a frying pan over medium-high heat until fragrant. Lower heat, then add 1/4 cup maple syrup and 1 tablespoon water. Cook until mixture caramelizes, about 30 seconds. Remove from heat and stir in the rest of the maple syrup.
  • Arrange the sourdough slices on plates. Spoon the mascarpone mixture over the sourdough. Place the skewers and seed mixture on top. Finish with a drizzle of maple syrup and a sprinkle of orange zest. Serve and enjoy.
