Whip up delicious strawberry-mascarpone filled biscuits for a quick and irresistible dessert.
Ingredients:
  • 2 x 250g punnets strawberries, hulled, halved
  • 55g caster sugar
  • 4.40 gm vanilla extract
  • 250g mascarpone cheese
  • 60ml thickened cream
  • 12.00 gm sifted icing sugar
  • 12 Lattice biscuits
Instructions:
  • In a saucepan over medium-high heat, combine strawberries, caster sugar, and vanilla. Cook and stir for 1-2 minutes until the sugar melts and the strawberries begin to soften slightly - ensure they remain firm and do not overcook.
  • Combine the mascarpone, cream, and icing sugar until smooth. Divide the biscuits among serving plates, topping each with a spoonful of the mascarpone cream, fresh strawberries, and any reserved juices.
  • Place the remaining biscuits on top and generously drizzle with the flavorful berry juices.
