Cinnamon wafer and berry stacks

Replace heavy desserts with a light and refreshing berry treat for a delightful finale to your summer festivities.
Ingredients:
  • 1 eggwhite
  • 55g caster sugar
  • 40.00 ml plain flour
  • 20g butter, melted
  • 20.00 ml flaked almonds
  • 250g mascarpone
  • 24.00 gm icing sugar mixture
  • 40.00 ml Frangelico
  • 150g raspberries
  • 100g blueberries
  • 150g strawberries, washed, hulled, thickly sliced
Instructions:
  • Preheat the oven to 180°C. In a medium bowl, whisk the egg white and sugar until soft peaks form. Add flour, butter, and cinnamon, and mix well. Line an oven tray with baking paper and draw four 8cm discs. Spread 1 teaspoon of mixture into each disc using a small palette knife. Sprinkle one third of the almonds over the discs.
  • Bake in a preheated oven until just golden, 3-5 minutes. Allow to cool, then repeat with remaining mixture and almonds in 2 more batches.
  • In a small bowl, mix mascarpone, icing sugar, and Frangelico. Place a wafer on a serving plate, spread a layer of mascarpone mixture, and add berries on top. Repeat layering with wafers, mascarpone, and berries, ending with a wafer. Dust with icing sugar and serve promptly.
