Creamy Guatemalan rice pudding cooked with cinnamon-infused water, milk, and sugar.
Ingredients:
  • 2 cups water
  • 1 cup uncooked white rice
  • 2.5 cups milk
  • 2 tablespoons white sugar, or to taste
  • 0.5 teaspoon salt
  • 1 cinnamon stick
Instructions:
  • In a bowl, mix water and rice together. Allow to soak for at least 30 minutes.
  • In a saucepan, bring water and rice to a boil. Cover, reduce heat to medium-low, and simmer for 20-25 minutes until rice is tender and liquid is absorbed.
  • In a saucepan, combine milk, sugar, salt, and a cinnamon stick. Simmer for 20 minutes until thick like pudding. Remove and discard the cinnamon stick before serving.
