Arroz con Leche (Mexican Rice Pudding)

Traditional Mexican rice pudding made with creamy whole and evaporated milk, infused with aromatic cinnamon.
Ingredients:
  • 4 cups water
  • 0.5 cinnamon stick
  • 2.25 cups uncooked white rice
  • 4 cups whole milk
  • 4 cups evaporated milk
  • 1.25 cups white sugar
  • 2 pinches ground cinnamon
Instructions:
  • In a saucepan over high heat, infuse water with cinnamon stick until it releases its color and flavor for about 5 minutes. Add rice, cover, and cook over low heat until tender and water is absorbed, about 20 minutes.
  • Add whole milk slowly to the rice, followed by the evaporated milk. Stir in the sugar. Cook without a lid until the sugar dissolves and the mixture thickens, approximately 10 minutes.
  • Enjoy this dish warm or cold and enhance the flavors by sprinkling each portion with ground cinnamon.
