Maple Bacon-Cinnamon Bun Cheesecake

Decadent cinnamon bun cheesecake on vanilla wafer crust, topped with crispy bacon and maple syrup.
Ingredients:
  • 1 cooking spray
  • 1 (17.5 ounce) can refrigerated cinnamon roll dough with icing (such as Pillsbury® Grands!®)
  • 2 (8 ounce) packages cream cheese, softened
  • 0.75 cup white sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 0.75 cup sour cream
  • 1.75 cups crushed vanilla wafers
  • 0.33333334326744 cup margarine, melted
  • 0.25 pound maple-smoked bacon
  • 0.5 cup maple syrup
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), and generously grease a 9-inch round or square cake pan. Add the cinnamon rolls into the pan.
  • Bake in the warmed oven until lightly golden, approximately 20 minutes, ensuring the rolls remain soft inside. Take out of the oven and keep warm. Maintain oven temperature. Coat an 8-inch springform pan with cooking spray.
  • In a large mixing bowl, whip cream cheese, sugar, and vanilla extract until creamy. Add eggs one at a time, then blend in sour cream until fully incorporated.
  • Mix together crushed wafers and melted margarine in a separate bowl, then firmly press the mixture into the bottom of the springform pan.
  • Cut the slightly baked cinnamon rolls into 3/4-inch cubes and gently mix them into the creamy cheesecake filling. Smooth the mixture over the crust.
  • Create a water bath for the springform pan by submerging it in hot tap water, ensuring the water reaches at least 3/4 up the sides. This method prevents leaks and promotes even baking of the cheesecake.
  • Bake in the preheated oven for 1 hour until a toothpick comes out clean. Remove from the oven and water bath, cool in the springform pan for 1 hour, then chill in the refrigerator for 4 hours before serving.
  • As the cheesecake chills, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy and browned all over, approximately 10 minutes. Drain on paper towels and crumble before serving.
  • Drizzle maple syrup and sprinkle bacon crumbles over cheesecake.
