Christmas Strawberry Bread

Popular festive pink bread that delights guests annually. Requested recipe by many.
Ingredients:
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1.75 cups frozen sweetened strawberries, thawed
  • 2 tablespoons strawberry extract
  • 3 eggs, beaten
  • 2 cups sugar
  • 1.5 cups canola oil
  • 0.25 cup frozen sweetened strawberries, thawed, with syrup
  • 0.5 cup sugar
  • 0.25 cup water
  • 1 tablespoon strawberry extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then generously grease and flour two 5x9 inch loaf pans.
  • Combine the flour, baking soda, salt, and cinnamon in a bowl. In another bowl, whisk together 1 3/4 cups of strawberries, 2 tablespoons of strawberry extract, eggs, sugar, and oil. Gently fold the flour mixture into the strawberry mixture. Pour the batter into the loaf pans.
  • Bake for 45 minutes in a preheated oven, or until a toothpick inserted in the center comes out clean. Allow to cool on wire racks.
  • Combine 1/4 cup strawberries, syrup, sugar, water, and 1 tablespoon strawberry extract in a saucepan. Bring to a boil, stirring constantly until sugar dissolves, approximately 5 minutes. Drizzle over warm bread.
