Elevate your breakfast with festive fluffy pancakes topped with fresh summer fruit.
Ingredients:
  • Maple syrup, to serve
  • 150g (1 cup) self-raising flour
  • 40.00 gm caster sugar
  • 185ml (3/4 cup) milk
  • 1 egg
  • 4.40 gm vanilla essence
  • 300ml ctn thickened cream
  • 45g (1/4 cup) icing sugar, sifted, plus extra, to dust
  • Fresh red fruit (such as strawberries, raspberries and cherries), to decorate
  • Toasted coconut flakes, to decorate
Instructions:
  • In a large bowl, mix the flour and sugar together. Create a hollow spot in the middle and pour in the milk, egg, and vanilla. Whisk everything together until the batter is smooth.
  • 1. Heat a lightly greased non-stick pan over medium-low heat. 2. Pour 3 tablespoonfuls, 2 tablespoonfuls, and 1 tablespoonful of pancake mixture separately into the pan to create 3 different-sized pancakes. 3. Cook for 1 minute on each side or until golden brown. 4. Repeat the process to make 3 more pancakes in the same sizes.
  • Make 3 smaller pancakes by using 3 teaspoonfuls, 2 teaspoonfuls, and 1 teaspoonful of pancake mixture. Repeat to make 3 more pancakes of the same size.
  • Beat cream and icing sugar until firm peaks form. Transfer to a piping bag, cut a small opening. Place 2 largest pancakes on plates. Pipe cream, add fruit. Top with next biggest pancake. Repeat layering with cream, fruit, and pancakes. Finish with fruit. Drizzle maple syrup, sprinkle coconut flakes, dust with icing sugar. Serve.
