Pancake grazing board recipe

Elevate kids' breakfast with fluffy pancakes, fresh fruit, maple bacon, Caramilk sauce, and golden syrup butter.
Ingredients:
  • 225g (1 1/2 cups) self raising flour
  • 30g butter, melted, plus extra, for frying
  • 2 eggs, separated
  • 350ml buttermilk
  • 55g (1/4 cup) caster sugar
  • 200g maple glazed streaky bacon, fried until crisp, to serve
  • Fresh berries, to serve
  • Other fresh fruit, sliced, to serve
  • Maple syrup, to serve
  • Passionfruit pulp, to serve
  • 180g block Caramilk chocolate, chopped
  • 185ml (3/4 cup) pouring cream
  • 250g unsalted butter, at room temperature
  • 125ml (1/2 cup) golden syrup
Instructions:
  • In a bowl, add flour. In a large jug, mix butter, egg yolks, and buttermilk. Use electric beaters to whip egg whites and caster sugar until soft peaks form. Pour the buttermilk mixture into the flour and mix. Gently stir in one-third of the whipped egg whites. Carefully fold in the rest of the whipped egg whites until just combined.
  • Place a large frying pan over high heat and melt the extra butter until it becomes foamy. Spoon pancake batter onto the pan, spreading it to create 8cm diameter pancakes. Cook for 2 minutes until bubbles form on top and the bottom turns golden brown. Watch the temperature to avoid burning the pancakes. Flip and cook for an additional 30-45 seconds until golden brown. Repeat with the remaining batter.
  • In a large heatproof bowl set over a saucepan of simmering water, melt the chocolate and cream together, stirring occasionally with a metal spoon until smooth. Transfer the melted mixture to a serving bowl and keep it warm for serving.
  • Use electric beaters to whip butter in a bowl until it becomes pale and creamy. Mix in golden syrup and then transfer the whipped butter to a serving bowl.
  • On a large serving board, set out bowls of fondue and whipped butter. Surround the bowls with pancakes. Add bacon, berries, and fruit around the pancakes. Serve with maple syrup.
