Create individual lasagnas using Chef John's method with savory crepe-like pancakes as noodle replacements.
Ingredients:
  • 2 large eggs
  • 0.5 teaspoon kosher salt
  • 1 teaspoon olive oil
  • 0.5 cup cold water
  • 0.5 cup all-purpose flour
  • 1.5 cups full-fat ricotta cheese, well drained
  • kosher salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper
  • 1 tablespoon finely sliced fresh basil
  • 0.5 cup finely grated Parmigiano-Reggiano cheese
  • 1.5 cups prepared marinara sauce
  • 1 cup grated Monterey Jack cheese
  • 1 tablespoon finely grated Parmigiano-Reggiano cheese
  • 1 teaspoon finely sliced fresh basil
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C) and gather 4 small, shallow, oven-proof baking dishes or ramekins.
  • In a large bowl, mix together eggs, salt, olive oil, water, and flour until smooth. Allow the batter to rest at room temperature for 15 minutes before cooking the pancakes.
  • Prepare a nonstick skillet with a light coating of oil over medium heat. Once hot, pour approximately 1/4 cup of batter into the skillet and swirl to spread evenly. Cook until the batter sets and the surface dries, 1 to 2 minutes. Flip and cook for 1 more minute. Transfer to a plate, and repeat with the remaining batter to make 3 more pancakes. Cut each pancake into 3 triangles before serving.
  • In a bowl, mix together ricotta cheese, salt, pepper, cayenne, basil, and Parmigiano-Reggiano cheese until well combined using a fork.
  • For the lasagnas, start by spreading a generous amount of marinara sauce into each baking dish. Place a pancake triangle on top, followed by a layer of ricotta filling, Monterey Jack cheese, and more marinara sauce. Repeat the process with another layer, gently pressing down the second pancake triangle before adding the fillings. Finish by adding the last pancake triangle, remaining marinara sauce, Monterey Jack cheese, Parmigiano-Reggiano, and a drizzle of olive oil. Enjoy the delicious layers melting together in the oven!
  • Arrange the baking dishes on a large sheet pan and bake in the center of the preheated oven until they are golden brown and bubbly, approximately 15 minutes. Allow them to cool for around 5 minutes, then top with fresh basil before serving.
