Festive overnight pancake casserole with creamy custard and crunchy streusel - ideal for Christmas brunch.
Ingredients:
  • 1 (2 pound) package frozen pancakes (such as De Wafelbakkers®), cut in half
  • 5 large eggs
  • 1.25 cups heavy cream
  • 0.25 teaspoon kosher salt
  • 0.5 cup finely chopped pecans
  • 0.333 cup all-purpose flour
  • 0.25 cup brown sugar
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup cold unsalted butter, cubed
Instructions:
  • Gently coat a 9x13-inch baking dish with butter.
  • Prepare the casserole by puncturing each pancake half multiple times with a fork. Arrange them in 2 to 3 rows in a shingled pattern in the baking dish.
  • In a bowl, vigorously mix eggs, heavy cream, milk, vanilla, cinnamon, and salt until smooth. Pour this delightful mixture over the pancakes and refrigerate for 8 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C when you're ready to bake.
  • Make the delectable topping by mixing pecans, flour, brown sugar, cinnamon, and salt in a medium bowl. Then, incorporate the butter until the mixture is crumbly using either a fork or your fingers.
  • Take the pancakes out of the refrigerator and uncover them, then evenly sprinkle the streusel topping on top.
  • Bake until perfectly golden brown and cooked through, around 55 minutes in the preheated oven.
