Try my foolproof one-cup pancake recipe with endless fruit options for a delightful twist!
Ingredients:
  • 1 cup of self-raising flour
  • 1 cup of semi-skimmed milk
  • 1 large free-range egg
  • 1 pear
  • olive oil or unsalted butter
  • natural yoghurt
  • runny honey
Instructions:
  • In a mixing bowl, combine flour, milk, egg, and a pinch of sea salt, whisk until smooth. Grate the pear (including the core) into the mixture and gently stir. Heat oil or butter in a large pan over medium heat. Spoon the batter into the pan in batches, cooking until golden on the bottom, then flipping and cooking until done. Serve immediately with a dollop of natural yoghurt and a drizzle of runny honey.
