Fluffy ricotta pancakes made with pancake mix, ricotta cheese, and milk for a delightful twist on a classic breakfast dish.
Ingredients:
  • 2.5 cups pancake mix
  • 2.6666667461395 cups skim milk, or as needed
  • 2 cups part-skim ricotta cheese
Instructions:
  • Combine pancake mix, skim milk, and ricotta in a bowl and vigorously whisk until smooth. Adjust the consistency by adding more milk if needed until you reach your desired thickness.
  • Preheat a lightly oiled griddle over medium-high heat.
  • Spoon batter onto the hot griddle and cook until bubbles form and edges dry. Flip and cook until bottom browns. Repeat with remaining batter.
