Whisk banana and coconut cream into pancake mix for a delicious breakfast twist.
Ingredients:
  • 125ml (1/2 cup) thin cream, chilled
  • 40.00 gm caster sugar
  • 1 x 165ml can coconut cream
  • 250ml (1 cup) cold water
  • 1 x 200g bottle pancake shake mix (Green's brand)
  • 2 ripe bananas, peeled, thinly sliced
Instructions:
  • Whip cream and caster sugar with an electric beater until soft peaks form in a medium bowl. Then fold in coconut cream and continue whipping until firm peaks form. Cover with plastic wrap and chill in the fridge.
  • Incorporate water into the pancake mix following the packet instructions. Heat a 20cm non-stick frying pan over high heat. Pour one-quarter of the batter into the pan, covering the base. Cook each side for 1-2 minutes until golden. Repeat with the remaining batter in three more batches.
  • Fold the pancakes in half on serving plates. Divide the banana evenly among the pancakes, fold over to enclose the filling, and serve with coconut cream.
