Elevate breakfast hotcakes with exotic flavors: banana, makrut lime syrup, and creamy ice cream.
Ingredients:
  • 225g (1 1/2 cups) self-raising flour
  • 20.00 gm caster sugar
  • 2.50 gm ground cinnamon
  • 250ml (1 cup) buttermilk
  • 2 ripe bananas, peeled, mashed
  • 2 eggs, lightly whisked
  • 1 x 400ml can coconut milk
  • 100g (1/2 cup, firmly packed) brown sugar
  • 4 fresh makrut lime leaves, coarsely shredded
  • Melted butter, to grease
  • Fresh makrut lime leaves, extra, coarsely shredded, to serve
  • Lime wedges, to serve
  • Vanilla ice-cream, to serve
Instructions:
  • - Preheat your oven to 100°C. - In a large bowl, mix together flour, caster sugar, and cinnamon. Create a well in the center. - In a separate jug, combine buttermilk, banana, and egg. Whisk until smooth. - Slowly pour the buttermilk mixture into the flour mixture, whisking constantly to form a smooth batter. - Cover the bowl with plastic wrap and let it rest for 20 minutes.
  • In a saucepan over high heat, blend coconut milk, brown sugar, and lime leaves. Bring to a boil, stirring occasionally, for 5 minutes until the sauce slightly thickens. Remove from the heat, discard the lime leaves, and pour into a jug.
  • 1. Grease a large non-stick frying pan with a bit of melted butter and heat over medium heat. 2. Pour two 60ml (1/4-cup) portions of batter into the pan, leaving space for spreading. 3. Cook for 1 1/2-2 minutes until bubbles form on the surface and pancakes are golden underneath. 4. Flip and cook for another minute until golden. 5. Transfer to a heatproof plate, cover loosely with foil, and keep warm in the oven. 6. Repeat with the remaining melted butter and batter in 5 more batches, making sure to reheat the pan between batches.
  • Serve the hotcakes on individual plates. Drizzle with the fragrant makrut lime syrup, garnish with additional lime leaves, and enjoy promptly with lime wedges and a scoop of ice-cream, if desired.
