Buttermilk Banana Scones with Praline Glaze

Delicious buttermilk scones with banana chunks, topped with decadent praline glaze.
Ingredients:
  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup unsalted butter, cut into small pieces
  • 0.5 cup buttermilk
  • 1 large egg
  • 0.5 teaspoon vanilla extract
  • 1.5 cups finely chopped bananas
  • 1 tablespoon unsalted butter, melted
  • 0.5 cup unsalted butter
  • 0.5 cup brown sugar
  • 0.25 cup buttermilk
  • 0.25 teaspoon salt
  • 0.75 cup chopped pecans
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and cover a baking sheet with parchment paper.
  • In a large bowl, mix together flour, sugar, baking powder, baking soda, salt, and cinnamon. Use a pastry knife or 2 knives to cut in butter until the mixture resembles coarse meal with no large pieces left.
  • In a separate bowl, blend buttermilk, egg, and vanilla until smooth. Pour this mixture into the dry ingredients and stir for about 30 seconds. Add chopped banana and mix until just combined. Transfer everything onto a floured work surface.
  • Handle the dough delicately with floured fingers to form a ball, then transfer it to the parchment-lined baking sheet using a bench scraper or large spatula.
  • Shape the dough into a 12-inch wide circle that is 3/4 inch thick. Use a bench scraper or knife to divide the circle into 10 equal slices by pressing down and lifting. Avoid dragging the tool to prevent sealing the edges. Finish by brushing the top of the dough with melted butter.
  • Bake until scones are golden brown, about 20-25 minutes in the preheated oven.
  • Once the scones are in the oven, melt butter in a small saucepan over medium heat. Mix in brown sugar, followed by buttermilk and salt. Bring the mixture to a boil and cook for 1 minute. Stir in chopped pecans and continue boiling for an additional minute, stirring often. Remove from heat and let it cool slightly.
  • Pour the glaze over the scones while they are still warm and enjoy right away.
