Moist and flavorful banana scones, a delicious way to kickstart your morning.
Ingredients:
  • 2.75 cups all-purpose flour, or more as needed
  • 0.25 cup packed brown sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup cold butter, cut into pieces
  • 1 cup mashed ripe bananas
  • 0.75 cup buttermilk
  • 0.5 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 400°F (200°C) and line a baking sheet with a silicone baking mat like Silpat®.
  • In a medium bowl, mix together 2 3/4 cups of flour, brown sugar, baking powder, cinnamon, and salt until well combined. Add cold butter and use a pastry cutter to blend it into the dry ingredients until the mixture resembles coarse crumbs.
  • Combine mashed bananas, buttermilk, and vanilla in a small bowl, then mix into the dry ingredients until just combined. If needed, add a touch more flour. Handle the dough delicately, shaping it into a disc on the baking sheet. Lightly cut into 12 wedges or score the disc.
  • Bake in the preheated oven for 22 to 28 minutes until beautifully golden and fully baked. Allow to cool on the baking sheet briefly before transferring to a rack to cool completely.
