Elevate banana bread with Fiber One® Honey Clusters® cereal for added flavor and fiber.
Ingredients:
  • 2 cups Fiber One™ Honey Clusters® cereal
  • 3/4 cup sugar
  • 1/4 cup canola or vegetable oil
  • 1 cup buttermilk
  • 2 teaspoons vanilla
  • 1 egg
  • 1 cup mashed very ripe bananas (2 medium)
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
Instructions:
  • Preheat the oven to 350°F. Grease only the bottom of a 9x5-inch loaf pan. Put the cereal in a resealable plastic bag, seal it, and crush it with a rolling pin, meat mallet, or in a food processor.
  • In a large bowl, use an electric mixer to combine sugar and oil until well mixed. Then, on low speed, mix in buttermilk, vanilla, and egg until smooth. Add bananas and continue mixing. Finally, blend in flour, baking soda, and salt until fully incorporated.
  • Gently fold in the cereal until fully combined, then spread the mixture in the pan.
  • Bake for 1 hour 10 minutes to 1 hour 20 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes before transferring to a cooling rack. Allow it to cool completely for about 2 hours before slicing.
