Delicious pikelets topped with bananas and coconut cream for a decadent treat.
Ingredients:
  • 80ml (1/3 cup) thin cream
  • 40.00 gm caster sugar
  • 60g (1/4 cup) coconut cream
  • 55g (1/2 cup) almond meal
  • 6.00 gm baking powder
  • 1 egg, lightly whisked
  • 41.20 gm milk
  • 5.00 gm butter
  • 4 small ripe bananas, halved lengthways
Instructions:
  • Whip cream and 1 tablespoon of sugar with electric beaters until firm peaks form in a medium bowl. Slowly incorporate coconut cream while continuing to whisk until fluffy. Chill covered with plastic wrap in the fridge.
  • In a small bowl, mix the remaining sugar, almond meal, baking powder, egg, and milk until smooth. Heat butter in a large non-stick frying pan over medium-high heat until foamy. Pour four 60ml (1/4 -cup) amounts of batter around the pan's edge, leaving space for spreading. Cook for 1-2 minutes until bubbles form on the surface and pikelets are golden underneath. Flip and cook for another 1-2 minutes until golden and cooked through. Remove from heat.
  • Arrange the pikelets on serving plates and generously top them with sliced bananas and a dollop of creamy coconut.
