Healthier coconut banana pudding with reduced sat fat and sugar. Easy shortcut: skip crust, focus on filling.
Ingredients:
  • 1/4 cup sugar or sugar substitute equivalent to 1/4 cup sugar; follow package directions to use product amount equivalent to 1/4 cup sugar)
  • 1/4 cup cornstarch
  • 1 1/2 cups fat-free milk
  • 1 can (12 oz) evaporated fat-free milk
  • 1/4 cup refrigerated or frozen egg product, thawed
  • 3 tablespoons flaked coconut, toasted
  • 1/4 teaspoon rum extract or vanilla
  • 2 medium bananas, sliced
  • 1/2 container (8 oz) frozen fat-free whipped dessert topping, thawed
  • Flaked coconut, toasted (optional)
  • 1 1/3 cups Gold Medal™ all-purpose flour
  • 1/4 cup cooking oil
  • 3 tablespoons fat-free milk
Instructions:
  • In a heavy saucepan, combine sugar and cornstarch. Add milk and evaporated milk gradually. Cook over medium heat until thick and bubbly, stirring constantly. Let it cook for an additional 2 minutes. Remove from heat.
  • Gradually whisk a cup of the hot mixture into the egg in a medium bowl. Pour the egg mixture back into the saucepan and cook over medium-low heat for 2 minutes. Remove from heat and stir in 3 tablespoons coconut, vanilla, and rum extract. Allow to cool for 30 minutes, stirring occasionally.
  • Layer ripe bananas on the bottom of the Gold Medal™ Flour Baked Oil Pastry. Pour in the chilled filling, then cover with plastic wrap. Refrigerate for 4 hours.
  • Assemble the pie by spooning whipped topping on top and adding more toasted coconut if desired.
  • Preheat oven to 450°F. Mix 1 1/3 cups Gold Medal™ all-purpose flour and 1/4 teaspoon salt in a medium bowl. Add 1/4 cup cooking oil and 3 tablespoons fat-free milk, then mix with a fork. If needed, add 1 more tablespoon milk until dough is moist (it will look crumbly). Shape dough into a ball, then flatten slightly on a floured surface. Roll out into a 12-inch circle. Gently lift onto a 9-inch pie plate, being careful as it's delicate. Press into plate, trim edges, and create a crust. Prick dough all over with a fork, cover with foil, and bake for 8 minutes. Remove foil and bake for 5-6 more minutes until golden.
