Coconut banana fritters

Indulge in delicious banana fritters with caramel and coconut or create a simple frozen banana treat by dipping in chocolate and freezing on a stick.
Ingredients:
  • 300g (2 cups) self-raising flour
  • 1.25 gm bicarbonate of soda
  • 500ml (2 cups) soda water
  • 85g (1 cup) desiccated coconut
  • Plain flour, to coat
  • 750ml (3 cups) peanut oil
  • 3 large bananas, peeled, thickly sliced
  • Pure icing sugar, to dust
  • 200g (1 cup, firmly packed) brown sugar
  • 125ml (1/2 cup) pouring cream
  • 100g butter, chopped
Instructions:
  • In a saucepan over medium heat, combine sugar, cream, and butter. Stir until smooth, about 4-5 minutes.
  • Sift self-raising flour and bicarbonate of soda into a bowl, then whisk in soda water until smooth.
  • Spread coconut and plain flour on individual plates for easy access and organization.
  • In a medium saucepan, heat oil over medium heat until it reaches 180ºC. Coat 3 pieces of banana in flour, dip in batter, then roll in coconut until well coated. Fry in the oil until golden, approximately 1-2 minutes. Drain on a paper towel-lined plate. Repeat process with the remaining banana in batches.
  • Sprinkle the fritters with a dusting of icing sugar and serve alongside the luscious caramel sauce and creamy vanilla ice-cream.
