Coconut banana bread

Delicious coconut banana bread, perfect for snacking any time.
Ingredients:
  • 375.00 ml plain flour
  • 2.50 gm bicarbonate of soda
  • 180.00 gm firmly packed brown sugar
  • 85.00 gm desiccated coconut
  • 270ml can coconut cream
  • 2 eggs
  • 260.00 gm mashed banana
  • 4.40 gm vanilla extract
  • strawberry jam, to serve
Instructions:
  • Preheat your oven to 170°C/150°C fan-forced. Lightly grease a 6cm-deep, 10cm x 20cm loaf pan, then line the base and sides with baking paper, leaving a 2cm overhang on the long ends.
  • Sift together flour, baking powder, and bicarbonate of soda into a bowl. Mix in sugar and coconut. In a separate jug, combine coconut cream, eggs, banana, and vanilla. Gently fold the wet ingredients into the dry mixture. Transfer the batter into a greased pan. Bake for 1 to 1 hour 15 minutes, or until a skewer inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then gently transfer it onto a wire rack to cool completely. Enjoy the cake served with jam.
