Paleo Almond-Coconut Banana Bread

Delicious paleo banana bread with almond flour, almond butter, and coconut.
Ingredients:
  • 2 medium bananas, mashed
  • 3 large eggs
  • 0.25 cup almond butter, softened
  • 3 tablespoons agave nectar
  • 2 cups blanched almond flour
  • 0.5 cup unsweetened shredded coconut
  • 3 teaspoons baking powder
  • 0.5 teaspoon sea salt
  • 1 cup mini dark chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C) and line a bread pan with parchment paper, ensuring it is secured by tucking the paper around the sides.
  • In a large bowl, mix together mashed bananas, eggs, almond butter, and agave nectar.
  • In a separate bowl, combine almond flour, coconut, baking powder, and sea salt. Gently fold almond flour mixture into egg mixture until incorporated.
  • Incorporate most of the chocolate chips into the batter, keeping aside a small amount for garnishing. Transfer the batter into the pan and spread it evenly. Sprinkle the remaining chocolate chips on top and press them gently.
  • Bake until the top is beautifully golden brown, about 30 to 35 minutes in the preheated oven.
  • Take out of the oven and gently lift the parchment paper to release the loaf from the pan. Place on a wire rack to cool for a minimum of 10 minutes before cutting.
