Wholesome paleo pumpkin bread: almond flour, coconut oil, maple syrup, eggs; a dense & delicious breakfast treat.
Ingredients:
  • 1.5 cups almond flour
  • 0.5 cup coconut flour
  • 5 teaspoons pumpkin pie spice
  • 1.5 teaspoons baking soda
  • 1.5 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 (15 ounce) can pumpkin puree
  • 4 large eggs
  • 0.5 cup maple syrup
  • 5 tablespoons coconut oil, melted
  • 2 teaspoons pure vanilla extract
Instructions:
  • Preheat the oven to 350°F (175°C) and line a 9x5-inch loaf pan with parchment paper.
  • Combine almond flour, coconut flour, pumpkin pie spice, baking soda, baking powder, and kosher salt in a large bowl, then whisk together until well blended.
  • In a separate bowl, combine pumpkin purée, eggs, maple syrup, coconut oil, and vanilla. Mix until smooth, then add this mixture to the flour. Gently stir until the dry ingredients are just moistened. Pour the batter into the prepared pan.
  • Bake in the oven until a toothpick comes out clean, for about 55 to 70 minutes. Let it cool in the pan for 15 to 20 minutes, then transfer to a wire rack to cool completely.
