Indulge guilt-free with this creamy no-bake strawberry mousse cake, perfect for paleo and dairy-free diets.
Ingredients:
  • 100.00 gm almond meal
  • 42.50 gm desiccated coconut
  • 27.00 gm maple syrup or rice malt syrup
  • 52.50 gm coconut oil, melted
  • 400g strawberries, washed and hulled
  • 375.00 ml cashews, soaked overnight in water
  • 131.25 gm freshly squeezed lime juice (about 2 – 3 limes)
  • 84.38 gm maple syrup or rice malt syrup
  • 52.50 gm coconut oil
  • 1 vanilla bean, seeds scraped
Instructions:
  • Toast almond meal in a frypan over low heat until golden brown for a rich flavor, or omit for a raw base.
  • Combine almond meal, coconut, maple or rice malt syrup, and coconut oil in a mixing bowl until thoroughly mixed. Divide the mixture evenly between serving jars or glasses and chill in the fridge to set.
  • Blend 300g of fresh strawberries until smooth in a blender or food processor, then strain to create a silky puree.
  • After rinsing the soaked cashews, blend them with strawberry puree and lime juice in a high-powered blender until a smooth, creamy mousse-like texture forms. Remember to scrape down the sides of the bowl as needed. Once smooth, add maple or rice malt syrup, coconut oil, and vanilla, then blend until well combined.
  • Take the chilled jars or glasses out of the fridge. Evenly distribute the mousse mixture among them. Chill to set slightly. Chop the remaining strawberries and garnish with them and mint, if desired. Enjoy!
