Creamy vegan chocolate mousse with rich coconut milk.
Ingredients:
  • 100g dairy-free dark chocolate (85% cocoa), chopped
  • 60ml (1/4 cup) maple syrup
  • 30g (1/4 cup) raw cacao powder, sifted
  • 8.40 gm melted coconut oil
  • 8.80 gm vanilla extract
  • Large pinch of sea salt
  • 270ml can coconut milk
  • 1 orange
  • 40.50 gm maple syrup
  • 4.40 gm vanilla extract
  • 250g fresh strawberries, hulled, finely chopped
Instructions:
  • For the compote, grate the orange to get 1 tablespoon of zest. Remove the peel from the orange, discard it, and chop the flesh finely. In a small frying pan over medium heat, simmer the maple syrup and vanilla. Stir in the orange zest, chopped orange, and strawberries. Cook for 1-2 minutes until the strawberries are just tender, stirring occasionally. Let it cool before using.
  • Place the chocolate, maple syrup, cacao, oil, vanilla, and salt in a heatproof bowl over a saucepan of simmering water, ensuring the bowl doesn't touch the water. Stir occasionally with a metal spoon until melted and smooth. Slowly add the coconut milk, 2 tablespoons at a time, stirring constantly until well combined. Remove from heat, chill in the fridge, stirring occasionally, for about an hour until cooled and slightly thickened.
  • Using an electric beater with a whisk attached, whip the chocolate mixture on medium-low until soft peaks form, making sure not to over-beat. Quickly distribute the mixture among four 125ml (1/2 cup) glasses. Let it sit for 15 minutes, then add the compote on top.
