Indulge in tropical flavors with this Hawaiian-inspired banana bread – a blend of coconut milk, flour, macadamia nuts, and ripe bananas, yielding 3 delightful loaves.
Ingredients:
  • 1.25 cups coconut flour
  • 1 cup xylitol
  • 1 cup coconut sugar
  • 2 tablespoons ground flaxseed meal
  • 2 teaspoons baking soda
  • 3.5 cups mashed overripe bananas
  • 1 cup unsalted sweet cream butter, softened at room temperature
  • 0.5 cup coconut milk
  • 4 large eggs
  • 1 cup chopped macadamia nuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare three 9x5-inch loaf pans by greasing if using metal or glass, or leave ungreased if using silicone.
  • Combine coconut flour, all-purpose flour, xylitol, coconut sugar, flaxseed meal, baking soda, and salt in a large bowl, blending them until well incorporated.
  • In a separate large bowl, combine bananas, butter, coconut milk, and eggs. Mix in dry ingredients until smooth. Gently stir in macadamia nuts, then transfer batter into the prepared loaf pans.
  • Bake in the preheated oven for about 40 minutes or until a toothpick inserted into the center comes out clean. Cool briefly on a wire rack, then remove from the pans and let cool completely before serving warm.
