Create homemade coconut milk for a luscious tropical pudding.
Ingredients:
  • 5 cups grated fresh coconut
  • 2 cups boiling water
  • 5 tablespoons cornstarch
  • 5 tablespoons white sugar
  • 1 pinch salt
Instructions:
  • Add shredded coconut to the simmering water in a large bowl. Allow it to steep for 15 minutes, then strain through cheesecloth, ensuring to press out all the liquid to get 3 cups.
  • Combine cornstarch, sugar, nutmeg, and salt. Simmer coconut milk in a saucepan. Whisk in the sugar mixture and cook until thickened, stirring constantly. Remove from heat, stir in vanilla, pour into an 8x8-inch pan. Cover with plastic wrap and refrigerate until set.
