Coconut (Haupia) and Chocolate Pie

Decadent chocolate coconut haupia pie - a luscious treat made with coconut milk, sugar, cornstarch, and chocolate.
Ingredients:
  • 1 (9 inch) unbaked pie crust
  • 1 (14 ounce) can coconut milk
  • 1 cup milk
  • 1 cup white sugar
  • 1 cup water
  • 0.5 cup cornstarch
  • 1.25 cups semi-sweet chocolate chips
  • 1.5 cups heavy cream
  • 0.25 cup white sugar
Instructions:
  • Preheat the oven to 350 degrees F. Bake the crust until golden brown, about 15 minutes. Cool before serving.
  • In a medium saucepan, combine coconut milk, milk, and 1 cup sugar, whisking until smooth. In a separate bowl, mix water and cornstarch until well combined. Bring the coconut mixture to a boil, then reduce to a simmer and slowly whisk in the cornstarch mixture. Stir over low heat until thickened, around 3 minutes.
  • In a microwave-safe bowl, melt chocolate chips in the microwave for about 1 minute. Divide coconut pudding into two bowls. Mix melted chocolate into one bowl, spread it on the bottom of the pie crust. Pour the plain pudding on top of the chocolate layer, smoothing it out. Refrigerate the pie for approximately 1 hour.
  • In a chilled glass or metal bowl, beat cream with an electric mixer until frothy. Gradually add sugar and continue beating until soft peaks form. Finish by layering the cream on top of the pie.
