Coconut tapioca pearl pudding with mango compote

Delicious and untested member recipe.
Ingredients:
  • 1 ripe mango
  • 18.00 gm sugar
  • Zest and juice of 1 lemon
  • 80g tapioca pearls
  • 500.00 gm boiling water
  • 220ml coconut milk
  • 50ml milk
  • 60.60 gm thick cream
Instructions:
  • Peel the mango and set aside 4 slices for garnish, then dice the rest.
  • In a medium saucepan over medium-high heat, cook mango cubes, sugar, and lemon juice for 5 minutes until it transforms into a compote. Remove from heat and set aside.
  • Simmer tapioca in 2 cups of boiling water for 5 minutes to eliminate excess starch. Drain well.
  • Combine milk, coconut milk, and cream in a saucepan over medium heat. Stir in tapioca pearls and simmer until translucent. Mix in lemon zest for a burst of flavor.
  • Serve the mango compote in glasses, then layer with tapioca cream. Chill for 30 minutes. Garnish with mango slices, lychees, lemon zest, and mint before serving.
