Impress your friends with this delightful Thai-inspired dessert featuring tapioca pearls, coconut, and pandan flavors.
Ingredients:
  • 1 (8 ounce) package grated coconut
  • 0.5 teaspoon salt
  • 5 pandan leaves, chopped
  • 0.75 cup water
  • 3 cups water
  • 1 (6.5 ounce) package small tapioca pearls
  • 1.5 cups white sugar
  • 3 tablespoons tapioca flour
Instructions:
  • Combine the coconut and salt in a small bowl; set aside.
  • In a blender or food processor, puree the pandan leaves with 3/4 cup water until smooth. Strain the mixture through a cheesecloth to obtain approximately 1/2 cup of pandan juice.
  • Bring a pot of water and tapioca pearls to a boil until pearls are soft and translucent. Mix in sugar and tapioca flour until sugar dissolves. Stir in pandan juice to create a thick batter. Pour into foil cups once removed from heat.
  • 1. Boil a large pot of water until bubbling. 2. Arrange a portion of the cups in a steamer basket over the simmering water. 3. Steam for 10 to 15 minutes until the cakes are fully cooked. 4. Finish with a sprinkle of coconut before serving.
