Delightful tapioca coconut pudding for tapioca and coconut lovers alike!
Ingredients:
  • 0.66666668653488 cup quick cooking pearl tapioca
  • 2 (14 ounce) cans coconut milk
Instructions:
  • In a saucepan over medium-high heat, combine tapioca, coconut milk, and salt, stirring constantly until boiling. Reduce heat to medium-low, then simmer for 5 minutes. Add sugar and stir until dissolved.
  • In a bowl, vigorously beat the egg until smooth. Gradually whisk in 1 tablespoon at a time of about 1/2 cup of the hot tapioca mixture. Transfer the egg mixture into the simmering pudding and stir well. Simmer gently until thickened for 3 to 5 minutes. Remove from heat and let it cool for 10 minutes before mixing in vanilla extract. Serve warm or chilled.
