Tropical banana pancakes with coconut syrup for a crowd-pleasing breakfast.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 tablespoon white sugar
  • 2.75 teaspoons baking powder
  • 1 teaspoon salt
  • 1.25 cups milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 very ripe banana, mashed
  • 2 tablespoons butter, melted
  • 1 teaspoon vegetable oil, or as needed
  • 1 cup white sugar
  • 0.75 cup buttermilk
  • 7 tablespoons butter
  • 1 teaspoon coconut extract
  • 0.5 teaspoon baking soda
Instructions:
  • Combine flour, 1 tablespoon white sugar, baking powder, and salt in a bowl. In a separate bowl, blend milk, egg, and vanilla extract. Gradually mix milk mixture into the flour mixture until combined.
  • In a bowl, use an electric mixer to whip the banana until smooth and creamy. Fold the creamed banana into the batter, then stir in the melted butter. Chill the batter in the refrigerator for 10 minutes before proceeding.
  • In a skillet over medium heat, spoon batter into hot oil and cook until bubbles form and edges are dry, about 3 to 5 minutes per side. Repeat with remaining batter.
  • In a saucepan over medium heat, melt together 1 cup of white sugar, buttermilk, and butter until sugar dissolves. Boil for 1 minute, then stir in coconut extract and baking soda until fully incorporated. Simmer for 1 to 2 minutes until baking soda is dissolved.
