Whisk together banana, egg, flax seed, and vanilla. Cook in coconut oil for a delicious gluten-free, paleo breakfast.
Ingredients:
  • 1 very ripe banana, mashed
  • 2 tablespoons ground flax seed
  • 0.25 teaspoon pure vanilla extract
  • 2 tablespoons coconut oil
Instructions:
  • Combine the mashed bananas and beaten eggs in a large bowl until silky. Stir in ground flax seed and vanilla until the batter is thoroughly mixed.
  • In a large skillet, warm coconut oil over gentle heat. Drop 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form in the centers, approximately 30 seconds. Flip and cook until lightly browned, about 1 to 2 minutes. Repeat with the rest of the batter.
