Flourless gluten-free waffles with chocolate chips, eggs, and mashed banana.
Ingredients:
  • cooking spray
  • 6 eggs, beaten
  • 3 bananas, mashed
  • 0.5 teaspoon vanilla extract
  • 0.5 cup peanut butter, melted
  • 1 cup oats
  • 0.5 cup chocolate chips
Instructions:
  • Heat up the waffle iron following the manufacturer's guidelines and grease the surfaces with cooking spray.
  • In a large bowl, vigorously whisk together eggs, bananas, and vanilla extract until silky smooth. Blend in peanut butter until fully incorporated. Gently mix in oats and chocolate chips until well combined.
  • Prepare the waffle batter and cook on the waffle iron as directed until beautifully golden, approximately 3 minutes.
