Quick and flourless banana muffins, perfect for a delightful afternoon tea. Ready in just 30 minutes!
Ingredients:
  • 4 large over-ripe bananas, mashed, plus extra sliced banana to serve
  • 2.50 gm bicarbonate of soda
  • 345.80 gm smooth peanut butter, plus extra to serve
  • 8.80 gm vanilla extract
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line a 12-hole muffin pan (1/3-cup capacity) with paper cases.
  • Add all ingredients into a food processor and pulse until well combined, being careful not to overmix to ensure tender muffins.
  • Evenly distribute the mixture into the prepared molds. Bake for 15 to 20 minutes until firm to the touch. Let it rest in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Garnish each muffin with a generous dollop of peanut butter and a slice of fresh banana. Serve and enjoy!
