Cool down with refreshing 5-ingredient vegan mango ice-cream, perfect for hot days and dietary restrictions.
Ingredients:
  • 1 yellow peach
  • 2 ripe bananas
  • 1 mango, roughly chopped
  • 125.00 ml unsweetened almond milk
  • 2 passionfruit, halved
Instructions:
  • Prepare a baking tray by lining it with baking paper. Score a cross at the base of the peach, then place it in a small heatproof bowl and cover it with boiling water. Allow it to sit for 5 minutes, then drain. Let it cool before peeling off the skin and discarding it. Roughly chop the flesh, removing the stone. Peel and cut the bananas into 4cm pieces. Arrange the peach, banana, and mango in a single layer on the prepared tray. Freeze for at least 4 hours or overnight.
  • Combine luscious frozen fruit and creamy milk in a food processor. Blend to perfection, pausing to scrape down the sides, until luxuriously smooth.
  • Quickly transfer the mixture into serving dishes and generously drizzle with passionfruit pulp before serving right away.
