Enhance the flavor of this gluten-free honey walnut cake by roasting the bananas for a deliciously rich twist.
Ingredients:
  • 3 ripe bananas
  • 0.33333334326744 cup honey
  • 3 tablespoons vegetable oil
  • 3 eggs, separated
  • 0.33333334326744 cup chopped walnuts
  • 1 teaspoon ground cinnamon, or to taste
  • 1 teaspoon ground nutmeg, or to taste
  • 1 teaspoon ground allspice, or to taste
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C), then gently prick the banana peels with a fork on a baking sheet.
  • Place bananas in the preheated oven and bake until the peels are black and the flesh is soft and mushy, for about 15 to 20 minutes. Then, let cool at room temperature for approximately 20 minutes.
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a loaf pan.
  • Using a sharp knife, split banana peels and transfer the flesh to a large bowl. Mix in honey and oil using an electric mixer on low speed until combined. Incorporate egg yolks one at a time. Stir in walnuts, cinnamon, nutmeg, and allspice.
  • Whisk egg whites and salt in a glass, metal, or ceramic bowl until soft peaks form.
  • Gently incorporate the fluffy beaten egg whites into the batter, then transfer the mixture into the greased loaf pan.
  • Bake in the preheated oven for 25 to 30 minutes until a toothpick inserted in the center comes out clean. Then, invert onto a plate and allow to cool.
